oh my...I just have to share this recipe. We made it tonight for dessert (not much else to do on a snow day ) and we were all very pleased. Even youngest ds who is very fussy. We didn't tell him what was in it until after he'd eaten it though.... ..he is very picky. We made a couple of substitutions: didn't use the agave instead used organic cane sugar. Also, didn't use the coconut butter but used coconut oil instead. Next time, we're going to try the banana one and are also thinking a combination of banana and raspberry would be good. It tasted like really rich fudgy cake...so good but without that heavy feeling afterward. My kind of cake! We tripled that recipe and it made a very small round cake. I thought it was very small, but was just enough for the four of us (very rich tasting). Ours was a little darker and a bit different consistency too....I'm thinking probably because we used coconut oil instead of coconut butter. That cake looks just fantastic. I actually like that it makes a small sized cake, because it's built-in portion control. Self-restraint is not my strong point, so that's a big plus for me. ;D
I didn't know you could buy coconut butter, or that it was ok to eat, so that was interesting, too.
Once it cools down a bit here I'll give that one a try.

I didn't know you could buy it either. I didn't look either to see if it's available here or not. I did buy a bag of coconut so we could make our own, but decided to use coconut oil instead. We had that on hand here, so it was just easier. ;D
